The door tags would become more important. There would still be the graph of the layout at the bottom for keeping track, but the "look ahead" it provides for scouting would be removed. The local room map would have to be changed to not give hints, but also let the player keep track of where they have been.
Or, remove the local map all together and require the player to figure out how to mark where they have been. Killed enemies, light orbs etc.

As one of those who is not a fan of mazes, I'd say this idea is a.) a good one and b.) slightly sadistic. |

I like this idea. To make it more palatable, you could place a really nasty boss in the way of a shortcut. So if you didn't want to solve the maze, you could try taking on the (really hard) boss. |
